Banana Bread Cinnamon Rolls with Maple Cream Cheese Glaze
This recipe combines the classic flavors of banana bread with the comforting warmth of cinnamon rolls, topped with a rich maple cream cheese glaze.
Ingredients
- warm milk
- active dry yeast
- sugar
- eggs
- vanilla
- mashed banana
- unsalted butter
- all-purpose flour
- salt
- unsalted butter
- brown sugar
- cinnamon
- ripe bananas
- brown sugar
- cream cheese
- unsalted butter
- powdered sugar
- maple syrup
- cinnamon
- vanilla extract
- salt
- heavy whipping cream
Method
- 1
In the bowl of a stand mixer, combine the warm milk, active dry yeast, and sugar. Let it sit for 5-10 minutes until foamy.
- 2
To the yeast mixture, add the melted butter, eggs, vanilla, and mashed overripe bananas. Mix with the whisk attachment until just combined.
- 3
Switch to the dough hook attachment. Add the flour and salt to the bowl. Knead on low speed for 8-10 minutes, until the dough is smooth and pulls away from the sides of the bowl.
- 4
Cover the bowl with a tea towel or plastic wrap and let the dough rise in a warm place for 60-90 minutes, or until it has doubled in size.
- 5
While the dough is rising, mix the brown sugar and cinnamon for the filling in a small bowl. Thinly slice the 2 ripe bananas.
- 6
Once the dough has risen, turn it out onto a lightly floured surface. Roll it out into a large rectangle. Spread the softened butter evenly over the dough. Sprinkle the brown sugar and cinnamon mixture on top, pressing it gently into the butter. Arrange the sliced bananas in rows over the filling.
- 7
Using a pizza cutter or knife, cut the dough into 12 even strips. Roll each strip up individually to form a cinnamon roll.
- 8
Sprinkle the extra 1/4 cup of brown sugar on the bottom of a 9x13 inch baking pan. Place the rolls in the pan. Cover tightly with plastic wrap and then aluminum foil. Refrigerate overnight.
- 9
The next morning, remove the rolls from the refrigerator. Let them sit at room temperature for about 30-45 minutes to rise. Preheat your oven to 350°F (175°C). Pour the heavy whipping cream over the rolls.
- 10
Place the pan in the preheated oven and bake for 20-25 minutes, or until the rolls are golden brown and cooked through.
- 11
While the rolls are baking, prepare the glaze. In a bowl, beat the softened cream cheese and butter until smooth. Add the powdered sugar, maple syrup, cinnamon, vanilla, and a pinch of salt. Beat until well combined and fluffy.
- 12
Let the rolls cool slightly for about 5-10 minutes after removing them from the oven. Spread the maple cream cheese glaze generously over the warm rolls. Serve immediately.
