Chicken and Vegetable Clear Soup

  • cornflour
  • water
  • capful vinegar
  • spring onions

Method

    Heat a dash of oil in a pan.

    Add 250 grams of chicken with bone, 1 inch of ginger, and a few cloves of garlic. Cook until the chicken turns white.

    Add 1 liter of water to create the chicken broth.

    Add lemongrass for flavor.

    Season with salt to taste.

    Bring the broth to a boil, then reduce the heat to low. Cover and cook for 25-30 minutes.

    After 25 minutes, the broth is ready. Sieve out the broth and shred the chicken.

    In the same pan, add another dash of oil.

    Add 1 chopped onion and a teaspoon of garlic. Sauté.

    Add chopped carrots and beans.

    Add mushrooms and cook for a bit.

    Add the shredded chicken.

    Pour in the chicken stock.

    Adjust salt and add pepper.

    Cover and cook for 5 minutes.

    (Optional) Mix 1 teaspoon of cornflour with some water to create a slurry. Add it to the soup to thicken it.

    Add a capful of vinegar.

    Garnish with spring onions.
