Chicken Pot Pie Soup
A creamy and comforting soup that captures all the flavors of a classic chicken pot pie, perfect for a cozy fall meal.
Ingredients
- 3 chicken breasts, thinly sliced
- 1 Mrs. Dash Table Blend Seasoning, to taste
- 1 Weber Kick'n Chicken Seasoning, to taste
- 1 Goya Adobo All Purpose Seasoning, to taste
- 2 tablespoon olive oil
- 2 tablespoon butter
- 1 yellow onion, diced
- 2 tablespoon garlic, minced
- 3 celery stalks, diced
- 4 carrots, diced
- 1 salt, to taste
- 1 black pepper, to taste
- 0.25 cup all-purpose flour
- 4 cup chicken broth
- 1 cup heavy cream
- 1 cup frozen sweet corn
- 1 cup frozen sweet peas
- 1 garlic powder, to taste
- 1 onion powder, to taste
- 1 Italian seasoning, to taste
- 1 Mrs. Dash Table Blend Seasoning, to taste
- 1 smoked paprika, to taste
Method

Thinly slice the three chicken breasts.

Season the chicken generously on both sides with Mrs. Dash Table Blend, Kick'n Chicken seasoning, and Adobo seasoning.

Heat olive oil in a large Dutch oven over medium-high heat. Add the seasoned chicken breasts and sear for 5-10 minutes on each side, until cooked through.

Once cooked, remove the chicken from the pot and set it aside to cool.

In the same pot, add the butter. Once melted, add the diced yellow onion and minced garlic. Sauté until fragrant.

Add the diced celery and carrots to the pot. Season with salt and pepper. Stir and let it simmer for about 5 minutes until the vegetables have softened.

Sprinkle the flour over the vegetables and stir to combine, cooking for about a minute to cook out the raw flour taste. This will create a roux to thicken the soup.

Gradually pour in the chicken broth, stirring constantly to prevent lumps. Then, stir in the heavy cream.

Add the frozen sweet corn and frozen sweet peas to the pot.

Shred the cooked chicken and add it back into the soup.

Season the soup with garlic powder, onion powder, Italian seasoning, Mrs. Dash, and smoked paprika. Stir everything together well.

Cover the pot and let the soup simmer while you prepare the biscuits. Stir occasionally.
