Hearty and Creamy Chicken Gnocchi Soup

Ingredients
- chicken breasts

- Italian seasoning
- olive oil
- shallot
- garlic
- tomato paste
- sun-dried tomatoes in oil
- chicken broth
- heavy cream
- Parmesan cheese
- unsalted butter
- gnocchi
- fresh spinach

Season the chicken breasts generously on both sides with salt, black pepper, garlic powder, paprika, red pepper flakes, and Italian seasoning.

Finely chop the shallot and garlic.

Heat about 2 tablespoons of olive oil in a Dutch oven or large pot over medium-high heat.

Sear the chicken breasts on both sides until golden brown and cooked through, about 5-6 minutes per side.

Remove the chicken from the pot and set it aside on a cutting board. Let it rest.

Add another splash of olive oil to the pot. Sauté the chopped shallot and garlic until fragrant, scraping up the browned bits from the bottom of the pot.
