Marry Me Chicken & Gnocchi Soup
An incredibly delicious soup featuring tender chicken, soft gnocchi, and a rich, creamy tomato-based broth, perfect for a cozy fall evening.
Ingredients
- butter
- sun-dried tomato oil
- diced onion
- celery
- carrots
- salt
- black pepper
- Kinder's Buttery Garlic & Herb seasoning
- herbs de Provence
- red pepper flakes
- sun-dried tomatoes
- tomato paste
- garlic
- chicken bouillon powder
- water
- heavy cream
- gnocchi
- chicken
- cream cheese
- Parmesan cheese
- fresh baby spinach
- fresh basil
Method

In a large pot or Dutch oven over medium heat, melt the butter and sun-dried tomato oil.

Add the diced onion, celery, and carrots. Season with salt, pepper, Kinder's Buttery Garlic & Herb, herbs de Provence, and red pepper flakes. Stir to combine.

Cook the vegetables for about 5 minutes until they begin to soften.

Stir in the chopped sun-dried tomatoes.

Add the tomato paste and cook for a few minutes, stirring to incorporate.

Stir in the minced garlic and cook for about 1 minute until fragrant.

Add the chicken bouillon, water, and heavy cream. Stir well and bring the mixture to a boil.

Once boiling, add the gnocchi and cooked chicken. Bring back to a boil and cook for 3-4 minutes, or until the gnocchi float to the top.

Turn off the heat. Stir in the softened cream cheese and freshly grated Parmesan cheese until fully melted and combined.

Stir in the chopped fresh baby spinach and chopped fresh basil until the spinach is wilted.

Season to taste with additional salt and pepper if needed.
