Power & Glow Immunity Soup
This not only delivers on the protein, but it has a lot of veggies that support your skin, gut, and immunity. It is cozy, easy to make, and super filling. Split into 3 4 servings for a nutrient-dense complement to any meal. The curry, ginger, roasted garlic, and smoked paprika bring the flavor, and the parmesan at the end adds the perfect umami.
Ingredients
- carrots
- white onion
- garlic
- olive oil
- curry powder
- smoked paprika
- salt
- black pepper
- bone broth
- soft / silken tofu
- fresh ginger
- lemon
- chili flakes
- parmesan cheese
- fresh basil
- seeds
Method

Preheat your oven to 400 F (200 C).

Peel and chop the carrots. Roughly chop the white onion.

Place the chopped carrots, onion, and garlic cloves onto a sheet pan or roasting tray.

Drizzle with olive oil. Season generously with salt, black pepper, curry powder, and smoked paprika. Toss to combine.

Roast in the preheated oven for 45-50 minutes, or until the vegetables are tender and golden brown.

Transfer the roasted vegetables to a blender.

Add the grated ginger, soft/silken tofu, and bone broth to the blender. Add chili flakes and lemon juice to taste.

Blend on high speed until the soup is completely smooth and creamy.

Taste and adjust seasoning if necessary with more salt, curry powder, or lemon juice.

Pour the hot soup into bowls.

Garnish with grated parmesan cheese, fresh basil, toasted seeds, and an extra squeeze of lemon juice before serving.
