Method

    In a large bowl or stand mixer, combine the melted butter, brown sugar, and granulated sugar. Mix until combined.

    Add the eggs, egg yolk, vanilla extract, and buttermilk. Mix well.

    In a separate bowl, sift together the cake flour, baking powder, salt, nutmeg, and baking soda.

    Gradually add the dry ingredients to the wet ingredients and mix until a sticky dough forms.

    Chill the dough for at least 30-60 minutes.

    Lightly flour a clean work surface.

    Turn the chilled dough out onto the surface and sprinkle with more flour.

    Pat or roll the dough into a rectangle about half an inch thick.

    Using a bench scraper or knife, cut the dough into rectangular bars. You can press an indentation down the center of each bar if desired.

    Heat 4-6 cups of oil in a deep pot to 350-370°F (175-188°C).

    Carefully place the donut bars into the hot oil, being careful not to overcrowd the pot.

    Fry for 1-2 minutes on each side, or until they are deep golden brown and cooked through.

    Remove the fried donuts from the oil and place them on a wire rack or paper towel-lined plate to drain.

    To make the glaze, brown the 6 tablespoons of salted butter in a small saucepan.

    In a medium bowl, combine the browned butter, powdered sugar, maple syrup, milk, vanilla, and a pinch of salt. Whisk until smooth.

    While the donuts are still warm, dip each one into the glaze, coating it completely.

    Place the glazed donuts back on the wire rack to allow the excess glaze to drip off and set slightly.
