Pumpkin Spice Cloud Cookies
Soft & fluffy pumpkin cookies that are the best pumpkin cookies ever!
Ingredients
- flour
- baking powder
- baking soda
- pumpkin pie spice
- cinnamon
- salt
- butter
- sugar
- brown sugar
- molasses
- pumpkin purée
- vanilla
- cream cheese
- powdered sugar
- milk

Preheat your oven to 350°F (177°C).

In a large bowl, use a hand mixer or stand mixer to beat the softened butter, brown sugar, and granulated sugar until combined.

Add the rest of the wet ingredients (molasses, pumpkin purée, and vanilla) to the butter and sugar mixture. Mix until everything is well combined.

In a separate bowl, whisk together the dry ingredients: flour, baking powder, baking soda, pumpkin pie spice, cinnamon, and salt.

Gradually add the dry ingredients to the wet ingredients and fold them in until just combined. Do not overmix.

Spoon about one tablespoon of the sticky dough onto a cookie sheet lined with parchment paper.

To handle the sticky dough, slightly wet your hands and gently pat down each cookie to flatten it a little.

Bake for 10-12 minutes.

While the cookies are baking, prepare the frosting. In a bowl, combine the cream cheese, powdered sugar, and milk. Mix until smooth and well combined.

Once the cookies have baked, let them cool completely on a wire rack.

Spread the cream cheese frosting on top of the cooled cookies.
