Thanksgiving Mashed Potatoes
A rich and creamy mashed potato recipe perfect for Thanksgiving, featuring roasted garlic, cream cheese, Muenster cheese, and chives.
Ingredients
- Russet Potatoes
- Garlic
- Olive Oil
- Unsalted Butter
- Heavy Whipping Cream
- Cream Cheese
- Muenster Cheese
- Chives
- Seasoning Blend
- Salt
- Black Pepper
Method
- 1
Preheat your oven or grill. The temperature for roasting the garlic is not specified, so a moderate heat of 400°F (200°C) is recommended.
- 2
Prepare the garlic: Cut the top off a whole head of garlic to expose the cloves.
- 3
Drizzle with olive oil, then wrap it tightly in aluminum foil. Roast for about 40 minutes, or until soft and caramelized.
- 4
Prepare the potatoes: Peel the potatoes.
- 5
Cut them into large, even-sized chunks.
- 6
Boil the potatoes: Place the cut potatoes into a large pot of boiling water.
- 7
Cook until they are fork-tender and fall apart easily when pierced, about 20-25 minutes.
- 8
Make the cream sauce: While the potatoes are boiling, melt half a stick of butter in a separate saucepan over medium heat.
- 9
Add the heavy whipping cream and cream cheese. Stir until everything is melted and combined.
- 10
Add cheese and herbs: Add the Muenster cheese to the cream sauce and stir until melted.
- 11
Finely chop the chives and add them to the sauce.
- 12
Add another pat of butter (about 2 tablespoons) and let it melt in.
- 13
Season the sauce: Add a generous amount of seasoning blend to the sauce and stir to combine. Taste and adjust if necessary. Keep the sauce warm on low heat.
- 14
Drain and rice the potatoes: Once the potatoes are cooked, drain them thoroughly in a colander.
- 15
For the fluffiest texture, pass the hot potatoes through a potato ricer into a large mixing bowl.
- 16
Combine ingredients: Squeeze the roasted garlic cloves out of their skins and chop them finely.
- 17
Add the chopped roasted garlic to the riced potatoes.
- 18
Pour the warm cream and cheese sauce over the potatoes and garlic.
- 19
Gently fold and mix all the ingredients together until just combined. Be careful not to overmix.
- 20
Serve the mashed potatoes in a large bowl. Create a well in the center and pour over any remaining sauce.
- 21
Garnish with extra chopped chives before serving.
