The Best Homemade Cinnamon Rolls

    In a small bowl, combine the lukewarm water, active dry yeast, and 1 tablespoon of sugar. Stir briefly, then cover the bowl with a towel and set it aside for about 10 minutes to allow the yeast to bloom and become foamy.

    In a large mixing bowl, combine the all-purpose flour, 1/3 cup of sugar, and kosher salt.

    In a separate small bowl, whisk together one whole egg and one egg yolk. Add the egg mixture, the melted butter, and the activated yeast mixture to the dry ingredients.

    Mix all the ingredients with your hands until a shaggy dough forms.

    Turn the dough out onto a lightly floured surface. Knead for about 10 minutes until the dough is smooth and elastic.

    Lightly flour a clean bowl. Form the dough into a ball, place it in the bowl, and cover. Let it rise in a warm place for 1.5 to 2 hours, or until it has doubled in size.

    While the dough is rising, prepare the filling. In a bowl, combine the room temperature butter, brown sugar, ground cinnamon, nutmeg, and cloves. Mix with a fork until well combined and forms a paste-like consistency.
