Wonton Tostadas with Tuna Tartare and Avocado Cream
Crispy wonton tostadas topped with a creamy avocado spread and fresh tuna tartare, garnished with a hint of jalapeño.

- brown onion

- lime
- plain yoghurt

- wonton skins
- cooking oil
- sashimi-grade tuna
- light soy sauce
- mirin
- rice wine vinegar
- ginger

Scoop the flesh of one avocado into a blender.

Add the brown onion to the blender.

Add the jalapeño to the blender.

Squeeze the lime juice into the blender.

Add the garlic cloves.

Add the coriander.

Season with salt.

Add the plain yoghurt.

Blend all ingredients until a smooth cream is formed. Transfer to a bowl or squeeze bottle.

Take a stack of wonton skins.

Use a round cookie cutter to cut circles out of the wonton skins.

Deep fry the wonton circles in hot oil until they are golden brown and crispy.

Remove the fried wontons from the oil using a spider strainer and place them on a paper towel-lined plate to drain excess oil.

Lightly sprinkle the hot wontons with salt.

Finely dice the sashimi-grade tuna into approximately 1 cm cubes and place it in a bowl.

In a separate small bowl, combine the light soy sauce, mirin, rice wine vinegar, grated ginger, and grated garlic to create the dressing. Mix well.

To the bowl of diced tuna, add the thinly sliced spring onions and toasted sesame seeds.

Pour the prepared dressing over the tuna mixture.

Gently mix all the ingredients together until well combined.

Take a crispy wonton tostada.

Squeeze or spoon a layer of avocado cream onto the wonton.

Top with a generous spoonful of the tuna tartare mixture.
