Ingredients
- 1/4 cup (50 ml) Water (might have to add more)
- 2 Cup (250g) Flour
- 3 Eggs
- 1 tsp (5g) Salt
Ingredients Fried Onions
- 1-2 Cups Vegetable Oil
- 1/2 Onion, thinly sliced
Ingredients Topping
- 200g Emmentaler or Gruyere cheese, grated
- 150g Bacon, diced
- Chives for garnish
Method

Mix flour and salt in a bowl. Make a well, add eggs and water. Mix into a smooth, thick dough. Let rest 15 minutes.

Bring a large pot of salted water to a boil. Press dough through a Spatzle press or colander into the boiling water.

When Spatzle float to the surface (2-3 minutes), remove with a slotted spoon. Set aside.

Fry bacon in a pan until crispy. Remove and set aside.

In the same bacon fat, fry onion slices until golden and crispy.

Layer Spatzle, cheese, and bacon in an oven-safe dish. Repeat layers.

Bake at 200°C (400°F) for 10 minutes until cheese is melted and bubbly.

Top with crispy onions and fresh chives. Serve immediately.
