Barbecue Chicken Calzones
Delicious calzones filled with barbecue chicken and mozzarella cheese, baked until golden brown and brushed with a garlic butter glaze.

- active dry yeast

Prepare the Dough Starter: In a large bowl, combine 2 cups of flour, 2 cups of warm water, 2 tablespoons of yeast, 4 tablespoons of sugar, and 3 tablespoons of dry milk powder. Stir until combined.

Cover the bowl with a towel and let it rest for 10 minutes to allow the yeast to activate.

Complete the Dough: After 10 minutes, add the remaining 3 cups of flour, 0.5 cup of olive oil, and 1 teaspoon of salt to the starter mixture.

Knead the dough using a stand mixer with a dough hook attachment for 10 minutes until it is smooth and elastic.

Portion the Dough: Transfer the dough to a lightly floured surface. Divide and shape the dough into approximately 14 equal-sized balls. Set aside.

Cook the Chicken: Heat cooking oil in a large skillet over medium-high heat. Place the chicken tenders in the pan and season them with onion powder, garlic powder, black pepper, salt, and paprika.

Cook the chicken until it is golden brown on both sides and cooked through.

Shred the Chicken: Once cooked, shred the chicken using a stand mixer with a paddle attachment or two forks.

Make the Filling: In a bowl, combine the shredded chicken with 2 cups of barbecue sauce and 6 tablespoons of melted butter. Mix well.

Assemble the Calzones: On a floured surface, take one dough ball and roll it out into a flat, oval shape.

Place a portion of the barbecue chicken mixture on one half of the dough, followed by a generous amount of shredded mozzarella cheese.

Fold the other half of the dough over the filling. Pinch and twist the edges to seal the calzone securely.

Place the assembled calzones on a baking sheet. Whisk an egg to create an egg wash and brush it over the top of each calzone.

Bake: Bake in a preheated oven at 3500F (1750C) for 20 minutes, or until golden brown.

Prepare the Glaze: While the calzones are baking, prepare the garlic butter glaze. In a small bowl, mix together 1 stick of melted butter, fresh parsley, and garlic powder.

Finish and Serve: Once the calzones are out of the oven, immediately brush the garlic butter glaze over the hot calzones. Serve warm.
