Ingredients

Method

    Preheat your smoker to 225°F (107°C).

    Prepare the meat by cubing the chuck roast into large, uniform pieces.

    Apply yellow mustard all over the beef cubes to act as a binder for the seasoning.

    Generously season all sides of the beef with your favorite BBQ rub.

    Place the seasoned beef cubes on a wire rack and put them into the preheated smoker. Smoke for 3 hours. Spritz the meat hourly with a liquid like apple cider vinegar or beef broth to keep it moist.

    After 3 hours, remove the beef from the smoker. Place it in a foil pan, add 3 tablespoons of butter, 1/2 cup of beef broth, and 1 cup of BBQ sauce. Cover the pan tightly with aluminum foil.

    Return the covered pan to the smoker and continue to cook for another 2 hours, or until the beef is fall-apart tender.

    While the beef finishes cooking, dice a large onion. Melt 1 tablespoon of butter in a pan over medium heat and cook the onions until they are caramelized.

    Once the beef is done, remove it from the smoker and shred it using gloved hands or forks.

    Preheat your oven to 350°F (175°C). To assemble the sliders, slice the sheet of slider buns in half horizontally. Place the bottom half in a baking dish lined with parchment paper.

    Layer 6 slices of cheddar cheese on the bottom buns.

    Evenly spread the shredded BBQ beef over the cheddar cheese.

    Top the beef with the caramelized onions and drizzle with additional BBQ sauce if desired.

    Layer 6 slices of provolone cheese over the onions.

    Place the top half of the slider buns on top.

    Brush the tops of the buns with melted butter and sprinkle with everything bagel seasoning.

    Bake in the preheated oven for 20 minutes, or until the cheese is melted and bubbly and the tops are golden brown.
