Beef Stew with Peas and Potatoes

- flour
- garlic
- whole onion
- rosemary

- carrot

Method

Heat a large pot or Dutch oven over medium-high heat. Add the butter and let it melt.

Lightly coat the beef cubes in flour. Place the floured beef into the hot pot in a single layer.

Sear the beef on all sides until nicely browned.

Add the garlic clove and sliced onions to the pot.

Add the fresh herbs (rosemary, sage) and the diced carrots.

Season generously with salt and pepper.

Cover the pot with a lid and let the ingredients cook together for a few minutes to release their aromas.

Pour in hot water until the meat is mostly covered. Stir gently.

Bring the liquid to a simmer, then reduce the heat, cover, and let it cook until the meat is tender, approximately 1 to 1.5 hours.

Once the meat is tender, uncover the pot.

Add the quartered potatoes to the stew.

Stir everything together, cover the pot again, and continue to cook for another 20-30 minutes, or until the potatoes are cooked through and the sauce has thickened.
