Beet and Avocado Lime Tartare
My favorite appetizer and also the simplest and most flavorful!
Ingredients
- beets
- shallot
- cornichons
- olive oil
- capers
- dill
- Dijon mustard
- tamari
- dukkah
- Salt
- Pepper
- avocado
- lime
- olive oil

Method
- 1
Dice the cooked beets into small, even pieces and transfer them to a mixing bowl.

Finely chop the shallot and add it to the bowl with the beets.

Finely chop the cornichons and add them to the bowl.

Add the capers to the bowl.

Finely chop the dill and add it to the other ingredients.

Pour in the tamari, add the Dijon mustard, and drizzle with olive oil.

Mix all the ingredients in the bowl until thoroughly combined. Set aside.

In a separate bowl or food processor, combine the avocado, lime juice, 1 tablespoon of olive oil, salt, and pepper. Mash or process until smooth and creamy.

To assemble, use a ring mold placed on a serving plate.

Spoon the beet mixture into the bottom of the ring mold, pressing it down gently to create an even layer.

Top the beet layer with the creamy avocado mixture, spreading it to the edges of the mold.

Carefully lift the ring mold to reveal the tartare.

Garnish the top of the tartare with dukkah spice and a sprig of fresh dill.
