Boursin Chicken Meatballs with One-Pot Cheesy Asparagus Orzo
These oven-baked Boursin chicken meatballs are probably the best chicken meatballs you'll ever make! Plus, the cheesy asparagus orzo is made in one pot and it’s so easy and delicious - making it the perfect easy dinner for busy nights when you’re too burnt out to cook.
Ingredients

Method

Preheat your oven to 400°F (200°C).

In a large mixing bowl, combine the ground chicken, Boursin cheese, egg, lemon zest, salt, Italian seasoning, Italian breadcrumbs, olive oil, and chopped fresh basil.

Using your hands, mix all the ingredients until they are well combined.

Roll the mixture into meatballs, approximately 1.5 inches in diameter.

Place the meatballs in a cast-iron skillet or on a baking sheet.

Bake for 25-30 minutes, or until the meatballs are cooked through and golden brown.

While the meatballs are baking, heat the butter and olive oil in a large pot or pan over medium heat.

Add the diced onion and minced garlic, and sauté until fragrant and softened.

Add the uncooked orzo to the pan and toast for a minute, stirring constantly.

Pour in the chicken bone broth, stir to combine, and bring the mixture to a simmer.

Cover the pot and let it cook for about 8-10 minutes, or until most of the liquid is absorbed.

Uncover and stir in the chopped asparagus and heavy cream. Continue to cook, stirring frequently, until the asparagus is tender and the orzo is creamy.

Remove the pan from the heat. Stir in the freshly grated Parmesan cheese, butter, and lemon juice until the cheese is melted and the sauce is creamy. Season with salt and pepper to taste.
