Boursin sausage & veg orzo
One pot. ONE POT. Cooks in 20 minutes and it has the most incredible creamy flavour. I packed mine with veggies and tons of protein. I snuck in even more by using bone broth 😉 It’s such a lovely dish and so good when you’re short on time. The whole family will loooove it, including the kiddos. Save this & give it a try!!
Ingredients
- zucchini
- chicken sausages
- cherry tomatoes
- orzo, dry
- Boursin cheese
- chicken bone broth
- water
- olive oil
- salt
- black pepper
- garlic powder
- chili flakes
Method

Slice the chicken sausages into rounds.

Dice the zucchini.

Slice the cherry tomatoes in half.

Add a splash of olive oil to a large pot over medium heat.

Add the sliced sausage, diced zucchini, and halved cherry tomatoes to the pot.

Season the contents of the pot with salt, pepper, and garlic powder. Stir everything together and cook for about 5 minutes, or until the vegetables begin to soften.

Push the sausage and vegetables to the side of the pot and place the Boursin cheese in the center.

Add the dry orzo around the cheese.

Pour in the chicken bone broth and water.

Cover the pot and let it simmer for 10 minutes.

Remove the lid. The orzo should be mostly cooked and the liquid bubbling.

Stir everything together, breaking up the Boursin cheese until it melts into a creamy sauce. Continue to cook for another 5 minutes, stirring occasionally, until the orzo is cooked through and the sauce has thickened. If it becomes too thick, add another splash of water.

Serve the orzo in bowls, garnished with chili flakes if desired.
