Braised Pork Spare Ribs with Quail Eggs in Oyster Sauce

- Pork Spare Ribs
- Salt
- Bay Leaves
- Black Pepper
- Quail Eggs
- Cooking Oil
- Brown Sugar
- Mama Sita's Oyster Sauce
- Vinegar
- Garlic
- Ginger
- Spring Onions
- Star Anise
- Water

In a large pot, bring water to a boil. Add the spare ribs.

Add salt, bay leaves, and black pepper to the pot. Stir to combine.

Cover the pot and let the ribs simmer for about 30 minutes to tenderize.

While the ribs are simmering, boil the quail eggs in a separate pot until cooked through. Once cooked, peel them and set aside.

After 30 minutes, remove the tenderized ribs from the pot using a slotted spoon and set them aside. It's recommended to rinse them to remove any scum.

In a clean pan, heat cooking oil. Add brown sugar and stir continuously until it melts and caramelizes.

Add the boiled spare ribs to the pan with the caramelized sugar. Stir well to coat the ribs evenly with the sugar glaze.

Pour in the Mama Sita's Oyster Sauce and mix to combine.

Add vinegar, garlic, ginger, the white parts of the spring onions, and star anise to the pan. Stir everything together.

Pour in water, cover the pan, and let it simmer. Allow the sauce to reduce and thicken.

Once the sauce has reduced, season with additional salt and pepper to taste. Stir well.

Add the peeled quail eggs and the green parts of the spring onions to the pan.

Give it a final stir to combine all the ingredients. The dish is now ready to be served, best enjoyed with steamed rice.
