Buffalo Chicken Smashed Tacos

  • 1 lb ground chicken
  • 2 tablespoons ranch seasoning powder
  • 0.25 cup chopped green onions
  • 1 cup shredded cheese (Mexican blend or cheddar)
  • 3 tablespoons Buffalo sauce
  • 1 pinch salt (to taste)
  • 1 pinch black pepper (to taste)
  • 8 count small flour tortillas
  • 2 tablespoons cooking oil
  • 3 cups thinly shredded cabbage
  • 0.5 cup sliced celery
  • 0.5 cup shredded carrots
  • 0.5 cup blue cheese crumbles
  • 2 tablespoons red wine vinegar
  • 1 tablespoon olive oil
  • 1 teaspoon sugar
  • 1 pinch salt (to taste)
  • 1 pinch black pepper (to taste)

Method

    In a large mixing bowl, combine the ground chicken, ranch seasoning powder, chopped green onions, salt, and pepper.

    Add the shredded cheese and Buffalo sauce to the bowl.

    Mix all the ingredients thoroughly until well combined.

    Take a small flour tortilla and spread a thin, even layer of the chicken mixture all the way to the edges. Repeat for all tortillas.

    Heat a large pan or griddle over medium-high heat. Add a little oil and spread it evenly.

    Place the tortillas on the hot griddle, chicken-side down. Press down firmly.

    Cook for about 5 minutes, until the chicken is golden brown, crispy, and cooked through.

    Flip the tacos and cook for another minute to toast the tortilla.

    While the tacos are cooking, combine the shredded cabbage, celery, carrots, and blue cheese crumbles in a separate bowl.
