Cajun Chicken Rigatoni
A delicious and easy-to-make Cajun chicken pasta dish with rigatoni, tinned tomatoes, and cream cheese, topped with Parmesan and fresh parsley.
Ingredients

- low fat cream cheese

Method

Dice the onion and red pepper.

Cut the chicken into chunks and place them in a bowl.

Add the Cajun seasoning to the chicken and mix until fully coated.

Heat the olive oil in a pan over medium heat.

Add the seasoned chicken to the pan and cook for about 7 minutes.

Once cooked, remove the chicken from the pan and set it aside.

Add the diced onion and pepper to the same pan and cook for about 5 minutes.

Add a splash of water to the pan and scrape up any flavorful bits from the bottom.

Pour in the tinned tomatoes.

Grate the garlic cloves into the pan.

Add more Cajun seasoning, followed by salt and black pepper. Stir everything together.

Let the sauce simmer for 10 minutes.

While the sauce is simmering, boil the rigatoni in salted water according to package directions.

After the sauce has simmered, stir in the cream cheese and a splash of the pasta water. Mix until creamy.

Add the cooked chicken back into the sauce.

Drain the cooked pasta and add it to the pan with the sauce and chicken. Stir everything together to combine.

Serve the pasta on a plate and finish by grating fresh Parmesan cheese over the top.
