- yellow wonton wrappers

In a large glass bowl, combine the minced pork, chopped shrimp, green onion, oyster sauce, soy sauce, chicken powder, white pepper, sugar, cornstarch, water, and sesame oil.

Mix vigorously in one direction until the mixture becomes sticky and paste-like.

Prepare a small bowl of water.

Wet the edges of a wonton wrapper with water using your fingers.

Cup the wrapper in your hand. Place a spoonful of the filling in the center.

Use a spoon or the back of a knife to push the filling down into the wrapper while gathering the sides up.

Squeeze your hand into a fist to pinch the top of the wrapper together, sealing the wonton. Repeat with the remaining wrappers and filling.

Bring a large pot of water to a rolling boil.

Carefully add the wontons to the boiling water, stirring gently to prevent them from sticking to the bottom of the pot.

Boil until the wontons float to the surface, then continue to cook for an additional 3 to 5 minutes to ensure the filling is cooked through.

Once cooked, remove the wontons from the water with a slotted spoon or strainer.

In a heatproof bowl, combine the chopped green onions, minced garlic, and sliced bird's eye chilli.

Heat the oil until very hot and carefully pour it over the aromatics. This will sizzle and release their fragrance.

Add the chilli oil, Chinese black vinegar, soy sauce, sugar, and sesame seeds to the bowl.

Stir well to combine all ingredients.

Place the cooked wontons in a serving bowl.
