    Prepare the steak. If dry brining, salt the steak cubes and let them rest. In a small bowl, combine the seasoning salt, black pepper, garlic powder, and onion powder.

    Sprinkle the seasoning mix over the steak cubes and toss to coat evenly.

    Heat avocado oil in a large skillet over high heat. Once the oil is shimmering, carefully add the seasoned steak bites in a single layer.

    Sear the steak for about 1-2 minutes per side until a deep brown crust forms. Don't overcrowd the pan; cook in batches if necessary.

    Once seared, add 28g of butter to the pan.

    As the butter melts, use a spoon to baste the steak bites.

    Remove the steak bites from the skillet and set them aside.

    To make the Cowboy Butter, deglaze the pan with a splash of cooking wine, scraping up any browned bits from the bottom.

    Reduce the heat to low and add the 57g of butter for the sauce. Once melted, add the minced fresh garlic, dijon mustard, and all the dry spices (paprika, cayenne, chili flakes, pepper, garlic powder).

    Add the fresh parsley and chives.

    Stir everything together, then add the zest and juice of half a lemon.

    Stir until the sauce is well combined.

    To serve, pour the Cowboy Butter sauce over the steak bites.
