Ingredients

  • butter
  • shallot
  • sundried tomatoes
  • garlic
  • orzo
  • Boursin cheese
  • chicken stock
  • chicken sausage
  • heavy cream
  • spinach
  • parmesan cheese
  • salt
  • black pepper

Method

  1. 1

In a large, oven-safe pan or Dutch oven, melt the butter over medium heat.

  2. 2

Add the diced shallot and chopped sundried tomatoes to the melted butter. Sauté for 1-2 minutes until fragrant.

  3. 3

Add the minced garlic and sauté for another minute.

  4. 4

Add the orzo to the pan and toast for about 1 minute, stirring to coat it in the butter and aromatics.

  5. 5

Place the block of Boursin cheese in the center of the pan, nestled into the orzo.

  6. 6

Pour the chicken stock around the cheese.

  7. 7

Cover the pan with a lid and transfer it to a preheated oven at 425°F (220°C).

  8. 8

    Bake for 10 minutes.

  9. 9

While the orzo is baking, brown the sliced chicken sausage in a separate skillet. Set aside.

  10. 10

After 10 minutes, carefully remove the pan from the oven. Stir everything together until the Boursin cheese is melted and incorporated.

  11. 11

Return the pan to the oven, uncovered, and bake for another 5-7 minutes.

  12. 12

Remove the pan from the oven and place it back on the stovetop over low heat.

  13. 13

Pour in the heavy cream and stir to combine.

  14. 14

Add a large handful of fresh spinach and stir until it wilts into the orzo.

  15. 15

Add the browned chicken sausage to the pan and mix well.

  16. 16

Season with salt and pepper to taste.

  17. 17

Top with freshly grated Parmesan cheese.

  18. 18

    Serve immediately.
