Creamy Corn & Spinach Fried Rice

My idea of a comfort go-to lunch/ dinner is a Rice Bowl! I always gravitate towards it & this combination of Spinach, Cheese & Corn is an all time classic! The savouriness from spinach, the richness from cheese & the sweetness from the corn compliments each other so well - I just can’t get enough 💌

Ingredients

  • Spinach
  • Basil leaves
  • Garlic
  • #1$4th Inch Ginger
  • Green chillies
  • Olive oil
  • Chilli oil
  • Salt
  • Pepper
  • Veggie Stock Cube
  • Spring Onion Greens
  • Sesame Seeds
  • Corn
  • Spring Onion Whites
  • Butter
  • Flour
  • Milk
  • Cheese
  • Chilli Oil

Method

    For the creamy corn sauce - start by heating some butter in a saucepan followed by spring onion whites & boiled corn.

    Sauté on high for 2 mins before adding in the chilli oil - toss well.

    Next, add in some flour & cook that off until it turns slightly brown.

    Reduce the heat to low & add in some cold milk to the pan - stir constantly until the sauce thickens up.

    Season with salt & pepper to taste & add in some cheese of your choice if you’d like - fold it in until the sauce turns velvety.

    Finally, garnish with some spring greens & keep that aside for later.

    For the Spinach Fried Rice - blanch some spinach leaves & remove excess moisture.

    Blend the blanched leaves with basil, ginger, garlic & green chillies - add in some water to blend it into a thick paste.

    Now, heat up some oil & chilli oil in a saucepan.

    Fry the spinach paste in it until it leaves the oil.

    Next, add in some cold boiled rice, salt & pepper to taste along with 1 veggie stock cube - toss everything until well combined & garnish with spring greens & toasted sesame seeds.

    Serve the fried rice alongside this creamy & cheesy corn sauce & Enjoy.
