Creamy Tortellini and Sausage Pasta
This creamy tortellini and sausage pasta dish was a last minute effort to make dinner from scratch (ish) tonight. It was creamy, cheesy and filling but the spinach and tomatoes gave it a lighter feel. It comes together in under 30 minutes making it an easy weeknight meal. Give it a try!
Ingredients
- olive oil
- onion
- ground sausage
- Italian seasoning
- five-cheese tortellini
- garlic
- butter
- spinach
- diced tomatoes
- all-purpose flour
- milk
- heavy cream
- Parmesan cheese
- salt
- black pepper
Method

In a large Dutch oven or skillet over medium-high heat, add the olive oil.

Add the chopped onion and sauté until it begins to soften.

Add the ground sausage to the Dutch oven.

Season the sausage with Italian seasoning and break it up with a spatula. Cook until browned.

While the sausage is cooking, bring a separate pot of water to a boil and cook the tortellini according to package directions.

Once the sausage is browned, add the minced garlic and stir until fragrant.

Add the butter and let it melt.

Stir in the spinach and cook until it wilts down.

Add the drained, diced tomatoes and stir to combine.

Sprinkle the flour over the sausage mixture and stir for about a minute to cook out the raw flour taste.

Pour in the milk and heavy cream, stirring to combine.

Add the shredded Parmesan cheese and stir until the sauce is smooth and has thickened.

Season the sauce with salt and pepper to taste.

Drain the cooked tortellini and add it to the sauce.

Gently fold the tortellini into the sauce until it is fully coated.

Serve immediately, garnishing with additional grated Parmesan cheese if desired.
