Dad's Special Fried Crab

- Dungeness crabs
- Cornstarch
- Cooking oil
- Butter
- Olive oil
- Garlic

Begin by cleaning the crabs. Over a sink, pull off the top shell (carapace).

Scrape out the crab butter (tomalley) and roe from the carapace and set it aside in a separate container.

Remove the gills (dead man's fingers) from the crab body using kitchen shears and discard them.

Thorougly wash and scrub the crab bodies under running water.

On a cutting board, use a heavy cleaver to chop each crab body in half.

Continue to chop the crab halves into smaller, manageable pieces.

Crack the claws with the back of the cleaver to allow the flavors to penetrate.

In a large mixing bowl, toss the crab pieces with cornstarch until they are evenly coated.

Heat a large wok with cooking oil for deep frying. The chef tests the temperature with his finger, but it's recommended to use a thermometer or wait for the oil to shimmer.

Carefully add the coated crab pieces to the hot oil and deep-fry until they are golden brown and cooked through.

Using a spider strainer, remove the fried crab from the wok and set it aside. Drain the wok of the frying oil.

Place the wok back on the heat. Add the stick of butter and olive oil and let it melt.

Add the sliced ginger and minced garlic to the melted butter and oil, and sauté until fragrant.

Pour the reserved crab butter and roe into the wok and stir to combine with the aromatics.

Add a generous amount of oyster sauce and a few dashes of fish sauce to the wok.

Stir in the chicken bouillon powder and sugar until fully dissolved into the sauce.

Add the chopped onions and sliced jalapeños to the sauce and stir-fry for a minute.

Return the fried crab pieces to the wok.

Using two large wooden spoons, toss the crab thoroughly to ensure every piece is coated in the flavorful sauce.
