Ingredients

  • chicken breasts
  • sized potatoes
  • olive oil
  • salt
  • pepper

Method

    Wash, peel, and cut the potatoes into small cubes.

    Place the cubed potatoes in a large bowl. Drizzle with olive oil and season with salt, pepper, garlic powder, and paprika.

    Toss the potatoes until they are evenly coated with oil and seasonings.

    Transfer the seasoned potatoes to an air fryer basket.

    Cook in the air fryer at 400°F (200°C) for about 20-25 minutes, shaking the basket a few times during cooking to ensure they cook evenly.

    While the potatoes are cooking, melt the butter in a large cast-iron skillet over medium-high heat.

    Cut the chicken breasts into bite-sized cubes.

    Add the chicken to the hot skillet. Season with salt, pepper, paprika, onion powder, and Italian seasoning.

    Cook the chicken, stirring occasionally, until it's fully cooked through.

    Add the minced garlic and cook for another minute until fragrant.

    Pour in the Buffalo Wild Wings Parmesan Garlic Sauce, using just enough to coat the chicken. Stir to combine.

    Once the potatoes are crispy, add them to the skillet with the chicken.

    Stir everything together until well combined.

    Sprinkle the shredded mozzarella cheese evenly over the top.

    Place the skillet in the oven and broil for a few minutes until the cheese is melted and bubbly.

    Remove from the oven, garnish with dried parsley, and serve hot. You can add more Parmesan Garlic sauce if desired.
