Gourmet Patty Melt
This recipe guides you through making a gourmet patty melt, featuring caramelized onions, a special burger sauce, crispy bacon, and perfectly cooked beef patties with melted Swiss cheese, all served on toasted brioche buns.

Method

Unwrap the ground beef and divide it into two equal portions. Roll each portion into a ball. Set aside.

Thinly slice the onions.

In a saucepan over medium heat, melt 1 tablespoon of butter with 1 tablespoon of olive oil.

Add the sliced onions to the pan. Season with salt, pepper, and sugar. Stir to combine.

Cook the onions, stirring occasionally, until they are soft and have started to brown.

Deglaze the pan by adding Worcestershire sauce and red wine. Continue cooking until the liquid has reduced and the onions are deeply caramelized. Set aside.

In a mixing bowl, combine ketchup, mayonnaise, Dijon mustard, and a dash of hot sauce.

Finely dice the cornichons and chives, then add them to the bowl.

Add pickle juice and a pinch of salt. Mix everything together until well combined.

Place strips of bacon in a cold pan.

Place a piece of parchment paper over the bacon and press it down with a heavy weight (like a burger press or another pan) to keep it flat.

Cook over medium heat until crispy. Remove the bacon and set it on a plate.

Place the beef balls into the hot pan with the rendered bacon fat.

Place parchment paper over each ball and use a burger press to smash them into thin patties.
