🍳

Ingredients

  • onions
  • butter
  • olive oil
  • salt
  • black pepper
  • sugar
  • Worcestershire sauce
  • red wine
  • ketchup
  • mayonnaise
  • Dijon mustard
  • hot sauce
  • cornichons
  • chives
  • pickle juice
  • salt
  • ground beef
  • salt
  • black pepper
  • bacon
  • Swiss cheese
  • brioche buns
  • butter

Method

  1. 1

Unwrap the ground beef and divide it into two equal portions. Roll each portion into a ball. Set aside.

  2. 2

    Thinly slice the onions.

  3. 3

In a saucepan over medium heat, melt 1 tablespoon of butter with 1 tablespoon of olive oil.

  4. 4

Add the sliced onions to the pan. Season with salt, pepper, and sugar. Stir to combine.

  5. 5

Cook the onions, stirring occasionally, until they are soft and have started to brown.

  6. 6

Deglaze the pan by adding Worcestershire sauce and red wine. Continue cooking until the liquid has reduced and the onions are deeply caramelized. Set aside.

  7. 7

In a mixing bowl, combine ketchup, mayonnaise, Dijon mustard, and a dash of hot sauce.

  8. 8

Finely dice the cornichons and chives, then add them to the bowl.

  9. 9

Add pickle juice and a pinch of salt. Mix everything together until well combined.

  10. 10

Place strips of bacon in a cold pan.

  11. 11

Place a piece of parchment paper over the bacon and press it down with a heavy weight (like a burger press or another pan) to keep it flat.

  12. 12

Cook over medium heat until crispy. Remove the bacon and set it on a plate.

  13. 13

Place the beef balls into the hot pan with the rendered bacon fat.

  14. 14

Place parchment paper over each ball and use a burger press to smash them into thin patties.

  15. 15

Season the patties with salt and pepper. Cook for a few minutes, then flip.

  16. 16

Place two slices of Swiss cheese on each patty. Cover the pan with a lid to melt the cheese. Once melted, remove the patties and let them rest.

  17. 17

Toast the brioche buns, buttered-side down, in the pan.

  18. 18

On the bottom bun, place a slice of Swiss cheese.

  19. 19

Spread a generous amount of the burger sauce over the cheese.

  20. 20

Place one of the cooked patties on top of the sauce.

  21. 21

Add a layer of caramelized onions, followed by the crispy bacon.

  22. 22

Top with the second patty and another dollop of sauce.

  23. 23

Place the top bun on the burger.

  24. 24

Add butter to the pan and melt.

  25. 25

Place the assembled burger into the pan. Press down with a plate or spatula to toast the outside of the bun until golden brown and crispy.

  26. 26

Remove the patty melt from the pan, slice it in half, and serve immediately.
