Healthy Roasted Cauliflower with Dates
A delicious and healthy roasted cauliflower dish with sweet dates and a zesty lemon-garlic dressing.
Ingredients

Preheat your oven to 425°F (220°C).

Wash the cauliflower. Remove the leaves and core, then break or cut the head into bite-sized florets.

Place the cauliflower florets into a large mixing bowl.

Drizzle the cauliflower with 2 tablespoons of olive oil.

Season with salt, pepper, garlic powder, and crushed red pepper flakes.

Toss the cauliflower with your hands until all the florets are evenly coated with oil and seasonings.

Spread the seasoned cauliflower in a single layer on a baking sheet lined with parchment paper.

Roast at 425°F (220°C) for 30 minutes until tender and slightly browned.

While the cauliflower is roasting, prepare the dressing. In a small bowl, add the lemon zest.

Squeeze the juice from the lemon into the same bowl.

Add 1 tablespoon of olive oil, the minced garlic, and season with salt and pepper. Whisk to combine.

Chop the pitted dates into small pieces.

Once roasted, transfer the hot cauliflower back into the large mixing bowl.

Pour the lemon-garlic dressing over the warm cauliflower.

Add the chopped dates to the bowl.
