High-Protein Creamy Chipotle Burrito
This high-protein, low-calorie burrito recipe is perfect for meal prep. The creamy chipotle sauce is made with Greek yogurt for a healthier alternative. The burritos are filled with seasoned ground beef and cheese, then pan-seared for a golden, crispy finish.
Ingredients
- onion
- garlic
- lean ground beef
- low-sodium taco seasoning
- beef broth
- tomato paste
- light cream cheese
- low-calorie tortilla wraps
- low-fat cheese
- non-fat Greek yogurt
- light mayonnaise
- chipotle pepper in adobo sauce
- lime juice
- honey
- smoked paprika
- garlic powder
- salt
Method
- 1
Start by finely chopping the onion.
- 2
Heat a large skillet or wok over medium-high heat. Add the chopped onion and sauté until softened and fragrant.
- 3
Add the minced garlic to the skillet and cook for one additional minute.
- 4
Add the lean ground beef to the skillet. Break it up with a spoon.
- 5
Season the beef with the taco seasoning and mix well. Cook until the beef is fully browned.
- 6
Stir in the beef broth, tomato paste, and light cream cheese. Continue to cook, stirring frequently, until the liquid has been absorbed and the mixture is thick and creamy.
- 7
Lay out a tortilla wrap and spoon a portion of the beef mixture onto the center. Top with shredded low-fat cheese.
- 8
Fold the sides of the tortilla in, then roll it up tightly to form a burrito. Repeat for the remaining tortillas and filling.
- 9
Place the burritos seam-side down in a hot, lightly oiled pan over medium-high heat. Cook for a few minutes on each side until golden brown and crispy.
- 10
While the burritos are cooking, prepare the chipotle sauce. In a blender or food processor, combine the non-fat Greek yogurt, light mayonnaise, chipotle pepper, lime juice, honey (if using), smoked paprika, garlic powder, and a pinch of salt.
- 11
Blend the sauce ingredients until completely smooth and creamy.
- 12
Once the burritos are browned, remove them from the pan. Serve immediately with the creamy chipotle sauce for dipping.
