High Protein Hot Honey Popcorn Chicken with Crispy Potatoes
This recipe creates a complete meal prep dish featuring crispy baked or air-fried popcorn chicken coated in a sweet and spicy hot honey sauce, served alongside seasoned roasted potatoes.
Ingredients
- 900 g potatoes, peeled and diced
- 1 teaspoon garlic powder
- 1 teaspoon oregano
- 1 teaspoon paprika
- 0.5 teaspoon cayenne pepper
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 count cooking spray
- 800 g chicken breast, diced into cubes

- 1 large egg
- 60 g cornflour (cornstarch)

- 60 g sriracha
- 60 g honey
- 1 tablespoon chives, finely chopped (for garnish, optional)

In a large baking dish, combine the diced potatoes with garlic powder, oregano, paprika, cayenne, salt, and pepper.

Lightly coat with cooking spray and toss with your hands until the potatoes are evenly seasoned.

Cook using one of the following methods: Oven Bake: 200°C (400°F) for 30-35 minutes. Air Fry: 190°C (375°F) for 25-30 minutes.

In a bowl, season the diced chicken breast with garlic powder, onion powder, paprika, cayenne, salt, and pepper.

Crack in the egg and mix thoroughly until all the chicken pieces are coated.

Transfer the seasoned chicken and cornflour to a large container with a lid. Seal the container and shake vigorously until every piece of chicken is fully coated in the cornflour.

Arrange the coated chicken pieces in a single layer on a wire rack or air fryer basket. Lightly spray the tops with cooking spray.

Cook the chicken until golden brown and crispy using one of the following methods: Oven Bake: 220°C (425°F) for 15-18 minutes. Air Fry: 200°C (400°F) for 10-12 minutes.

While the chicken is cooking, add the sriracha and honey to a large pan or wok over low-medium heat.

Stir continuously as the mixture comes to a gentle bubble. Continue to cook for another minute or two, stirring, until the sauce thickens slightly.

Once the chicken is cooked, add it directly to the pan with the hot honey sauce.

Gently toss the chicken until it is completely coated in the sauce.
