Honey & Garlic Roast Chicken

This is summer comfort food at its best - we’re also using chicken thighs for this which are juicy and delicious with the glazed crispy skin. Thighs are also more cost effective than breast so it’s a really budget friendly meal and SO tasty!

Ingredients

  • chicken thighs
  • baby potatoes
  • bell pepper
  • red onion
  • courgette
  • carrots
  • olive oil
  • honey
  • garlic
  • Dijon mustard
  • soy sauce

Method

    Preheat the oven to 200°C (392°F).

    Add the chopped potatoes to a large baking dish.

    Add the chopped peppers to the baking dish.

    Add the chopped onion to the baking dish.

    Add the chopped carrots to the baking dish.

    Add the sliced courgette to the baking dish.

    Place the chicken thighs on top of the vegetables.

    Drizzle the chicken thighs with olive oil.

    In a separate small bowl, combine the honey, garlic, Dijon mustard, and soy sauce to create the marinade.

    Whisk the marinade ingredients together until well combined.

    Pour the marinade over the chicken thighs.

    Use a brush to ensure the chicken thighs are evenly coated with the marinade.

    Roast in the preheated oven for 45 minutes.

    Once cooked, allow the dish to rest for 10 minutes before serving.
