Hot Honey Cajun Sausage Orzo

Ingredients
- pork sausages
- Cajun seasoning
- onion
- peppers
- garlic purée
- tomato purée
- honey
- chilli crisp oil
- orzo
- -1ltr chicken stock
- light cream cheese
- cheddar
- Red Leicester
- Fresh parsley

In a large pan over medium heat, cook the sliced sausages until they are browned.

Add the Cajun seasoning, diced onion, and diced peppers to the pan. Sauté for 4-5 minutes until the vegetables soften.

In a separate small bowl, mix the honey and chili crisp oil together to create a hot honey drizzle.

Add half of the hot honey mixture to the pan, along with the garlic purée and tomato purée. Stir everything together well.

Pour the orzo and hot chicken stock into the pan. Bring to a gentle simmer.

Cook, stirring frequently, until the orzo is cooked through and the liquid has been absorbed and thickened. Add more stock if the mixture becomes too dry before the orzo is cooked.

Once the orzo is cooked, stir in the light cream cheese until it is fully incorporated and the sauce is creamy.

Sprinkle the grated cheddar and Red Leicester cheese over the top of the orzo.

Place a lid on the pan and let the cheese melt completely.

Drizzle the remaining hot honey mixture over the melted cheese and garnish with fresh parsley.
