Method

    Slice the chicken breasts in half horizontally to create four thinner cutlets.

    In a shallow dish, combine the flour, garlic powder, salt, and pepper. Mix well with a fork.

    Dredge each chicken cutlet in the seasoned flour, ensuring it is lightly and evenly coated on both sides.

    In a large skillet over medium-high heat, add 2 tablespoons of butter and the olive oil. Allow the butter to melt completely.

    Place the floured chicken cutlets into the hot skillet in a single layer.

    Cook the chicken for about 3-4 minutes per side, until golden brown and cooked through.

    Once cooked, remove the chicken from the skillet and set it aside.

    Reduce the heat to medium. Add the minced garlic to the same skillet and sauté for about 30 seconds until fragrant, scraping up any browned bits from the bottom of the pan.

    Pour in the chicken broth and lemon juice to deglaze the pan, stirring to combine with the garlic. Bring the sauce to a simmer.

    Add the remaining 6 tablespoons of cubed butter to the skillet. Stir continuously until the butter has melted and the sauce begins to thicken.

    Stir in the chopped fresh parsley.

    Return the cooked chicken cutlets to the skillet, nestling them into the sauce.

    Spoon the sauce over the chicken to coat it well. Let it simmer for another minute.
