Lemon Garlic Chicken Sandwich
A delicious sandwich featuring crispy lemon garlic chicken, a zesty cucumber salad, and a creamy chipotle mayo, all served on a toasted ciabatta roll.
Ingredients
- 1 cup Chosen Foods Classic Mayo
- 1 can chipotle peppers in adobo sauce
- 1 count English cucumber, thinly sliced
- 0.25 head cabbage, shredded
- 2 tablespoon avocado oil
- 0.5 count lemon, juiced
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1 tablespoon fresh parsley, chopped
- 2 count chicken thighs, boneless, skinless
- 1 cup all-purpose flour
- 1 cup panko breadcrumbs or crushed cornflakes
- 2 tablespoon avocado oil
- 0.5 count lemon, juiced
- 5 clove garlic, minced
- 2 tablespoon soy sauce
- 1 tablespoon butter
- 1 teaspoon black pepper
- 2 tablespoon honey
- 2 count ciabatta rolls, toasted
- fresh parsley, chopped, for garnish, to taste

Combine the Chosen Foods Classic Mayo and the entire can of chipotle peppers in adobo sauce in a large mason jar or blender cup.

Use an immersion blender to emulsify the mixture until completely smooth and creamy. Set aside.

In a container with a lid, add thinly sliced cucumber and shredded cabbage.

Add avocado oil, fresh lemon juice, black pepper, garlic powder, salt, and chopped fresh parsley.

Secure the lid and shake vigorously until all ingredients are well combined. Set aside.

Place flour in one bowl and breadcrumbs/crushed cornflakes in another.

Dredge the chicken thighs first in the flour, ensuring they are fully coated.

Transfer the floured chicken to the breadcrumb bowl and press firmly to coat completely.

Place the breaded chicken thighs in an air fryer basket.

Air fry at approximately 375°F (190°C) for 15-20 minutes, or until golden brown, crispy, and cooked through.

While the chicken is cooking, prepare the sauce. Heat avocado oil and lemon juice in a pan over medium heat.

Add the minced garlic and sauté until fragrant.

Stir in soy sauce, butter, black pepper, and honey.

Cook the sauce, stirring occasionally, until it has reduced and thickened slightly.

Once the chicken is cooked, dip it into the warm lemon garlic sauce, turning to coat all sides thoroughly.

Spread a generous layer of the Chipotle Mayo on the bottom half of a toasted ciabatta roll.

Place the sauced lemon garlic chicken on top of the mayo.
