Loaded Baked Potato Casserole
A hearty casserole featuring baked potatoes mashed and layered with caramelized onions, steak bites, crispy bacon, and melted cheddar cheese, served with sour cream and green onions.
Ingredients
- russet potatoes
- olive oil
- salt
- bacon
- onion
- sugar
- steak bites
- steak seasoning
- cheddar cheese
- sour cream
- green onions
Method
- 1
Preheat your oven to 4250F (2200C).
- 2
Place 6 to 8 large russet potatoes in a baking dish.
- 3
Drizzle both sides of the potatoes generously with olive oil and sprinkle with salt.
- 4
Bake for 55 minutes.
- 5
While the potatoes are baking, cook the bacon in a large skillet until crispy. Remove the bacon and set aside, leaving the grease in the pan.
- 6
In the same skillet, add a bit more olive oil and two teaspoons of sugar to the sliced onions. Sauté until caramelized. Remove the onions and set aside.
- 7
In the same skillet, cook the steak bites, seasoning them with steak seasoning until browned. Set aside.
- 8
Once the potatoes are done baking, remove them from the oven. Using tongs or a fork, break them up and mash them slightly to form an even layer at the bottom of the baking dish.
- 9
Layer the caramelized onions over the mashed potatoes.
- 10
Add the cooked steak bites as the next layer.
- 11
Crumble the cooked bacon and sprinkle it over the steak bites.
- 12
Top the entire casserole with shredded cheddar cheese.
- 13
Return the casserole to the 4250F oven and bake for another 10-15 minutes, or until the cheese is melted and bubbly. The video creator notes that 10 minutes is likely sufficient to avoid overcooking the cheese.
- 14
Serve in a bowl, topped with a dollop of sour cream and a sprinkle of fresh green onions.
