Method

    Preheat your oven to 4250F (2200C).

    Place 6 to 8 large russet potatoes in a baking dish.

    Drizzle both sides of the potatoes generously with olive oil and sprinkle with salt.

    Bake for 55 minutes.

    While the potatoes are baking, cook the bacon in a large skillet until crispy. Remove the bacon and set aside, leaving the grease in the pan.

    In the same skillet, add a bit more olive oil and two teaspoons of sugar to the sliced onions. Sauté until caramelized. Remove the onions and set aside.
