Low Calorie Sweet & Sour Chicken
A low-calorie version of sweet and sour chicken, featuring air-fried chicken breast coated in a homemade sweet and sour sauce.
Ingredients
- raw chicken breast

- flour
- oil spray
- pineapple juice
- rice vinegar
- soy sauce
- water
- ketchup
- monkfruit sweetener
- garlic powder
- cornstarch
- water
Method

Cut 125g of chicken breast into cubes and place them in a mixing bowl.

Season the chicken with salt, pepper, garlic powder, and onion powder.

In a separate bowl, mix 3 tablespoons of flour with the same seasonings used on the chicken (salt, pepper, garlic powder, and onion powder).

Toss the seasoned chicken with the seasoned flour until fully coated.

Place the coated chicken pieces in a single layer in an air fryer lined with parchment paper. You can also bake the chicken.

Air fry the chicken at 400°F (200°C) for 10-12 minutes OR bake at 400°F (200°C) for 12-14 minutes.

While the chicken is cooking, prepare the sweet & sour sauce. In a bowl, combine pineapple juice, rice vinegar, soy sauce, water, ketchup, monkfruit sweetener, and garlic powder.

In a separate small dish, mix the cornstarch and water to create a slurry, then add it to the sauce bowl.

Stir all the sauce ingredients together until well combined.

Microwave the sauce for 1 minute to thicken it.

Once the chicken is cooked, transfer it to a large bowl.

Pour the thickened sweet and sour sauce over the chicken and toss to coat evenly.

Serve the sweet and sour chicken over a bed of rice and garnish with sesame seeds and chopped green onions if desired.
