Marry Me Steak Bites with Garlic Mashed Potatoes

This dinner is incredible! Using Melinda's Hot Sauce Sriracha instead of chili flakes is the move! If you’re making the Mash Potatoes make that first since it takes about 25-30 min and you can keep warm while making the Steak & Sauce.

Method

    Prepare the Mashed Potatoes: Place the potatoes and the halved garlic bulb in a pot. Cover with water and add a generous amount of salt. Bring to a boil and cook for 15-20 minutes, or until the potatoes are fork-tender. Once cooked, drain the water. Let the potatoes cool slightly, then peel them. Using a potato ricer or masher, mash the potatoes into a large bowl. Squeeze the roasted garlic out of its skin and into the bowl. Add the milk, salt, and pepper to taste. Mix until smooth and creamy. Add a pat of butter on top and keep warm while you prepare the steak and sauce.

    Cook the Steak: Cut the steak into 1x1 inch cubes. Place them in a bowl and season generously with salt and pepper.

    Heat a large skillet over high heat with a bit of oil. Add the steak bites in a single layer, ensuring not to overcrowd the pan. Sear for about one minute on all sides until a nice crust forms.

    Reduce the heat and add 2 tablespoons of butter to the pan. Baste the steak bites with the melted butter for about 30 seconds. Remove the steak from the pan and set it aside.

    Make the "Marry Me" Sauce: In the same skillet with the remaining butter and steak drippings, sauté the minced shallots over medium heat until fragrant, about 1-2 minutes.

    Add the minced garlic and cook for another 30 seconds until fragrant.

    Stir in the chopped sun-dried tomatoes, sun-dried tomato oil, and tomato paste. Cook for 1 minute, stirring constantly.

    Pour in the heavy cream and bring to a gentle simmer, stirring to combine.

    Add the lemon zest and juice, garlic powder, oregano, and paprika. Stir well.

    Grate in the Parmesan cheese and stir until the sauce is smooth and slightly thickened.

    Add the sriracha and mix it into the sauce.

    Assemble and Serve: To serve, spoon a generous amount of the garlic mashed potatoes onto a plate. Top with the seared steak bites. Pour the "Marry Me" sauce over the steak and potatoes. Garnish with freshly chopped chives and serve immediately.
