🍳

Ingredients

  • 2.5 pound ground beef
  • 1.5 cup diced onion
  • 0.5 cup minced garlic
  • 0.25 cup molasses
  • 0.5 cup diced green bell pepper
  • 0.5 cup diced carrots
  • 0.5 cup diced celery
  • 2 teaspoon dried thyme
  • 2 teaspoon dried sage
  • 2 count eggs
  • 0.5 cup ketchup
  • 1 cup breadcrumbs
  • 0.5 cup milk
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 3 tablespoon butter
  • 1 pound sliced mushrooms
  • 1 tablespoon minced shallots
  • 2 cup beef broth
  • 2 tablespoon cornstarch
  • 0.25 cup cold water
  • 2 tablespoon chopped fresh parsley

Method

  1. 1

In a large mixing bowl, combine the ground beef, diced onion, minced garlic, molasses, diced green bell pepper, diced carrots, and diced celery.

  2. 2

Add the dried thyme, dried sage, eggs, ketchup, breadcrumbs, milk, paprika, salt, and black pepper to the bowl.

  3. 3

Using gloved hands, thoroughly mix all the ingredients together until well combined.

  4. 4

To check for seasoning, cook a small piece of the mixture in a pan, taste it, and adjust the seasoning if necessary.

  5. 5

Preheat your oven to 375°F (190°C).

  6. 6

Shape the meatloaf mixture into a loaf and place it in a loaf pan.

  7. 7

Bake for approximately 45 minutes to 1 hour, or until cooked through.

  8. 8

Once cooked, remove the meatloaf from the oven and let it rest.

  9. 9

While the meatloaf is baking, melt the butter in a large skillet over medium-high heat.

  10. 10

Add the sliced mushrooms and sauté until they are browned and have released their moisture.

  11. 11

Add the minced shallots and garlic to the skillet and cook for another minute until fragrant.

  12. 12

Pour in the beef broth, bring to a simmer.

  13. 13

In a small bowl, whisk together the cornstarch and cold water to create a slurry.

  14. 14

Slowly pour the slurry into the simmering gravy while whisking continuously to prevent lumps.

  15. 15

Continue to simmer until the gravy has thickened to your desired consistency.

  16. 16

Stir in the fresh parsley and season with salt and pepper to taste.

  17. 17

Remove the rested meatloaf from the pan and slice it into thick pieces.

  18. 18

Serve the meatloaf slices over mashed potatoes and generously pour the mushroom gravy over the top. Garnish with a side of steamed broccoli.
