Onion Parmesan Pasta
A creamy and savory pasta dish featuring caramelized red onions, garlic, tomato paste, red wine, and parmesan cheese, finished with rigatoni pasta.

Method

Slice the red onions into rings. Finely chop the garlic.

Heat the olive oil in a large pan over low heat. Add the sliced onions and sauté until they are translucent and slightly golden at the edges.

Add the tomato paste and finely chopped garlic to the pan with the onions. Roast for 1-2 minutes, stirring to combine.

Deglaze the pan by pouring in the red wine, and bring it to a brief boil.

Add the broth and cream to the pan. Stir and let the sauce simmer over medium heat for 10 minutes.

While the sauce is simmering, cook the pasta in a separate pot of salted water until it is almost al dente.

In a small bowl, mix the flour with water to create a slurry. Stir the slurry into the sauce to thicken it.
