Ingredients

  • red onions
  • olive oil
  • tomato paste
  • garlic
  • red wine
  • broth
  • cream
  • rigatoni pasta
  • parmesan cheese
  • dark soy sauce
  • flour
  • water
  • salt
  • pepper

Method

  1. 1

Slice the red onions into rings. Finely chop the garlic.

  2. 2

Heat the olive oil in a large pan over low heat. Add the sliced onions and sauté until they are translucent and slightly golden at the edges.

  3. 3

Add the tomato paste and finely chopped garlic to the pan with the onions. Roast for 1-2 minutes, stirring to combine.

  4. 4

Deglaze the pan by pouring in the red wine, and bring it to a brief boil.

  5. 5

Add the broth and cream to the pan. Stir and let the sauce simmer over medium heat for 10 minutes.

  6. 6

While the sauce is simmering, cook the pasta in a separate pot of salted water until it is almost al dente.

  7. 7

In a small bowl, mix the flour with water to create a slurry. Stir the slurry into the sauce to thicken it.

  8. 8

Stir the soy sauce and grated parmesan cheese into the sauce. Let it simmer for another 10 minutes.

  9. 9

Using a spider strainer, transfer the nearly cooked pasta directly into the sauce. If needed, add a splash of the pasta cooking water to adjust the sauce consistency.

  10. 10

Stir everything together and let the pasta finish cooking in the sauce for about 5 minutes, allowing it to absorb the flavors.

  11. 11

Season the pasta with salt and pepper to taste.

  12. 12

Serve the onion parmesan pasta immediately, garnishing with fresh parsley and extra parmesan if desired.
