Preheat your oven to 200°C (400°F).

In a bowl, toss the halved potatoes with olive oil, salt, pepper, and optional paprika until evenly coated.

Spread the potatoes in a single layer on a baking tray.

Roast for 25-30 minutes, flipping them halfway through, until they are golden and tender.

While the potatoes are roasting, melt the butter with minced garlic in a small pan over low heat until the garlic is fragrant.

Once the potatoes are cooked, transfer them to a bowl, pour the garlic butter over them, and toss to combine. Sprinkle with fresh parsley.

Bring a large pot of salted water to a boil and cook the penne pasta according to package directions until al dente. Before draining, reserve about 1/4 cup of the pasta water.

In a separate pan, melt the butter over medium heat. Add the minced garlic and sauté until fragrant, being careful not to burn it.

Pour in the heavy cream and season with salt, pepper, and a pinch of nutmeg. Let it simmer gently for 2-3 minutes.

Reduce the heat and stir in the grated parmesan cheese until the sauce is smooth and creamy. If the sauce is too thick, add a splash of the reserved pasta water to reach your desired consistency.

Add the drained penne pasta to the sauce and toss until well-coated.

Pat the chicken breasts dry and season them on all sides with olive oil, paprika, garlic powder, oregano (or thyme), salt, and pepper.

Heat a grill pan or skillet over medium-high heat.

Place the seasoned chicken on the hot pan and grill for 5-6 minutes per side, or until the chicken is golden brown, has nice grill marks, and is cooked through.
