- cucumber
- mango
- sweet corn
- red onion
- cilantro
- lime
- honey
- null salt
- refried black beans
- corn tortillas
Method
- 1
Preheat the oven to 425°F (218°C).
- 2
In a bowl, combine the salmon chunks with 1 tablespoon of olive oil.
- 3
Add the taco seasoning to the salmon and toss with your hands until the chunks are evenly coated.
- 4
Line a baking sheet with parchment paper.
- 5
Arrange the seasoned salmon chunks in a single layer on the prepared baking sheet.
- 6
Drizzle a bit more olive oil over the salmon.
- 7
Bake for 8 minutes.
- 8
While the salmon bakes, prepare the salsa. In a large bowl, combine the diced cucumber, diced mango, corn kernels, chopped red onion, and chopped cilantro.
- 9
Add the lime zest, lime juice, and a drizzle of honey to the salsa ingredients.
- 10
Mix the salsa well to combine all ingredients. Season with salt to taste.
- 11
To assemble the tacos, spread a layer of refried black beans (or mashed avocado) onto each warm tortilla.
- 12
Place a few pieces of the baked salmon on top of the beans. Use a fork to gently press and flake the salmon.
- 13
Top generously with the mango corn salsa.
- 14
For serving, consider an extra squeeze of lime juice and a drizzle of honey over the finished tacos.
