Ingredients

  • salmon fillet
  • olive oil
  • taco seasoning
  • cucumber
  • mango
  • corn on the cob
  • red onion
  • cilantro
  • lime
  • honey
  • salt
  • pepper
  • corn tortillas
  • refried black beans

Method

  1. 1

Cut the salmon fillet into 1-inch cubes and place them in a bowl.

  2. 2

Drizzle the salmon with olive oil.

  3. 3

Sprinkle a packet of taco seasoning over the salmon.

  4. 4

Use your hands to toss the salmon cubes, ensuring they are evenly coated with the oil and seasoning.

  5. 5

Line a baking sheet with parchment paper.

  6. 6

Arrange the seasoned salmon cubes in a single layer on the prepared baking sheet.

  7. 7

Drizzle a little more olive oil over the salmon. Bake at 400°F (200°C) for 10-12 minutes.

  8. 8

While the salmon bakes, prepare the salsa. In a medium bowl, combine the diced cucumber, mango, corn kernels, red onion, and chopped cilantro.

  9. 9

Zest and juice one lime over the salsa ingredients.

  10. 10

Drizzle honey into the salsa and season with salt and pepper to taste.

  11. 11

Stir everything together until well combined.

  12. 12

To assemble the tacos, warm the corn tortillas. Spread a layer of refried black beans on each tortilla.

  13. 13

Place a few pieces of the cooked salmon on top of the beans. You can use a fork to gently flake the salmon pieces.

  14. 14

Top generously with the mango cucumber salsa. Serve immediately.
