Sausage & Veggie Skillet
A delicious one-pan meal featuring smoked sausage, a colorful array of vegetables, and pearl couscous, all seasoned and cooked to perfection.
Ingredients
- olive oil
- smoked sausage
- onion
- bell peppers
- zucchini
- seasoning blend
- garlic
- pearl couscous
- chicken stock
- lemon
- fresh cilantro
Method

Slice the smoked sausage into rounds.

Add olive oil to a large skillet or pan over medium-high heat. Add the sliced sausage and cook until browned on both sides, stirring occasionally.

Remove the browned sausage from the pan and set aside.

Add the chopped onion to the same pan, using the leftover fat from the sausage. Sauté until the onion begins to soften.

Add the chopped bell peppers and sliced zucchini to the pan. Sprinkle with the seasoning blend and stir to combine.

Continue to sauté the vegetables for about 2 minutes.

Add the minced garlic and sauté for another minute until fragrant.

Remove the cooked vegetables from the pan and set them aside.

Add the dry pearl couscous to the hot pan. Toast for about a minute, stirring constantly, until it becomes slightly nutty and aromatic.

Pour in the chicken stock. Bring the liquid to a boil.

Once boiling, reduce the heat to low, cover the pan with a lid, and let it simmer for about 8 minutes, or until the couscous has absorbed all the liquid and is tender.

Remove the lid and add the cooked vegetables and sausage back into the pan with the couscous.

Squeeze the juice of half a lemon over the dish.
