Method

    Take a chunk of 80/20 ground beef about the size of your palm.

    Roll it into a neat ball.

    Repeat until all the ground beef is used.

    In a small bowl, combine the salt, black pepper, onion powder, garlic powder, thyme, rosemary, and paprika.

    Mix thoroughly until well combined.

    In a separate bowl, add the mayonnaise, ketchup, mustard, pickle juice, garlic powder, paprika, and a dash of cayenne pepper.

    Whisk everything together until the sauce is smooth and fully combined. Taste and set aside.

    Place a skillet or thick-bottomed pan over medium to medium-high heat.

    Add a high-smoke point oil, like avocado oil, and heat until it starts to shimmer.

    Place a meatball onto the hot skillet. Immediately cover it with a piece of parchment paper and use a flat metal spatula to smash it down firmly into a thin patty.

    Season the patty liberally with the homemade burger seasoning.

    Squeeze a small swirl of yellow mustard on top of the seasoned patty.

    When the edges of the patty are browned and you can see it cooking through from the top (about 2-3 minutes), scrape under the patty and flip it.

    Immediately place a slice of American cheese on the flipped patty to melt.

    Cook for another 2-3 minutes.

    To make a double, cook a second patty. Once flipped, place the first cooked patty on top of the second one before adding the cheese.
