Shrimp and Grits

A rich and creamy dish featuring succulent shrimp and tender lobster tails served over cheesy grits, garnished with crispy bacon, fresh scallions, and Parmesan cheese.

Ingredients

  • 4 cup chicken broth
  • 1 teaspoon chicken bouillon
  • 1.5 cup grits
  • 0.5 count stick of butter
  • 0.5 cup heavy cream
  • 0.5 cup cheddar cheese, shredded
  • 6 count bacon strips
  • 1 lb shrimp, peeled and deveined
  • 1 tablespoon seasoning blend (for shrimp)
  • 0.5 count green bell pepper, diced
  • 0.5 count onion, diced
  • 1 count large clove of garlic, minced
  • 1.5 cup heavy cream
  • 1 tablespoon seasoning blend (for sauce)
  • 0.5 cup Parmesan cheese, grated
  • 2 count lobster tails
  • 0.25 cup scallions, sliced for garnish
  • Parmesan cheese, freshly grated for garnish

Method

    In a pot, bring 4 cups of chicken broth to a boil.

    Add 1 teaspoon of chicken bouillon and 1.5 cups of grits to the boiling broth.

    Whisk continuously to prevent clumping.

    Stir in a half stick of butter, a half cup of heavy cream, and a half cup of shredded cheddar cheese until well combined and creamy. Set aside.

    In a large skillet, cook the bacon until crispy. Remove the bacon from the skillet, leaving the grease, and set aside.

    Season the shrimp with a seasoning blend.

    Cook the seasoned shrimp in the bacon grease until pink and cooked through. Remove the shrimp from the skillet and set aside.

    Dice half a green bell pepper, half an onion, and one large clove of garlic.

    Add the diced vegetables to the same skillet with the bacon grease and sauté until softened.

    Pour in 1.5 cups of heavy cream, add another tablespoon of seasoning blend, and a half cup of grated Parmesan cheese. Stir to combine.

    Crack open two lobster tails and remove the meat. Add the lobster meat to the sauce and cook for about 3 minutes until opaque.

    Spoon a generous amount of grits onto a plate.

    Ladle the creamy lobster sauce over the grits.

    Crumble the crispy bacon over the sauce.

    Top with the cooked shrimp.

    Garnish with freshly grated Parmesan cheese and sliced scallions. Serve immediately.
