- 4 tbsp canola oil
- 4 boneless skinless chicken thighs
- 3/4 cup panko
- 1/4 cup grated Parmesan
- 1 cup milk
- 2 tbsp flour
Cajun sauce
- 1 tbsp butter
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 2 tsp Old Bay seasoning
- 1 tsp paprika
- 1/2 tsp cayenne pepper
- 1 lb farfalle pasta
- Fresh parsley and Parmesan for garnish

Cook pasta according to package directions. Drain and set aside.

Cut chicken into bite-sized pieces. Dredge in flour, dip in milk, then coat in panko mixed with Parmesan.

Heat canola oil in a large skillet over medium-high heat. Fry chicken 4-5 minutes per side until golden and cooked through. Remove and set aside.

In the same skillet, melt butter. Sauté onion 3 minutes, add garlic and cook 1 minute.

Pour in heavy cream and chicken broth. Add Old Bay, paprika, and cayenne. Simmer 5 minutes until thickened.

Toss pasta in the sauce. Top with crispy chicken. Garnish with parsley and Parmesan.
