Stanley Tucci's Pasta Fagioli

- carrots
- red bell pepper

- fresh thyme

- ground beef
- tomato paste
- beef broth
- marinara sauce
- cannellini beans
- bay leaves
- parmesan rind
- ditalini pasta
- kale
- lemon
- parmesan cheese
Method

In a large pot or Dutch oven, heat the olive oil over medium heat.

Add the diced onion, carrots, red pepper, and minced garlic to the pot. Sauté until softened.

Season the vegetables with dried oregano, fresh thyme, and salt.

Add the ground beef to the pot. Use a spoon to break it up and cook until it begins to brown.

Stir in the tomato paste and cook for another minute until fragrant.

Pour in the beef broth and marinara sauce.

Add the cannellini beans, bay leaves, and a parmesan rind. Stir everything together to combine.

Once boiling, add the ditalini pasta and cook for about 10 minutes, or until the pasta is al dente.

Stir in two handfuls of kale and let it wilt into the soup.
