Ingredients

  • Steaks
  • Russet Potatoes
  • Bacon Grease
  • Butter
  • Garlic
  • Heavy Cream
  • Dijon Mustard
  • Lemon Juice
  • Parmesan Cheese
  • Red Pepper Flakes
  • Parsley

  • Ice Cubes
  • Water

Method

  1. 1

Season the strip steaks generously on all sides with a salt and pepper blend.

  2. 2

Slice the potatoes in half lengthwise.

  3. 3

Use a french fry cutter to cut the potatoes into fries.

  4. 4

Place the cut fries into a large bowl of ice water to soak. This helps remove excess starch.

  5. 5

Place the seasoned steaks directly over hot coals on a grill. Cook for a few minutes per side until a good crust forms.

  6. 6

Flip the steaks and continue grilling until they reach your desired doneness (the video shows a medium-rare finish). Remove from the grill and let them rest.

  7. 7

In a large, deep pan or Dutch oven, heat the bacon grease over a burner until it's hot enough for frying.

  8. 8

Carefully add the soaked and drained fries to the hot grease and fry until golden brown and crispy.

  9. 9

Remove the cooked fries from the grease using a spider strainer and place them in a large metal bowl.

  10. 10

While the fries are still hot, season them with the salt and pepper blend and add the shredded Parmesan cheese. Toss to combine.

  11. 11

To make the sauce, melt the butter in a separate pan over medium heat.

  12. 12

Add the minced garlic to the melted butter and sauté until fragrant.

  13. 13

Pour in the heavy cream and whisk to combine.

  14. 14

Add the Dijon mustard, a squeeze of fresh lemon juice, Parmesan cheese, red pepper flakes, and the salt and pepper blend to the cream sauce.

  15. 15

Stir in the chopped fresh parsley and continue to whisk until the sauce is smooth and slightly thickened.

  16. 16

Slice the rested steaks against the grain into thin strips.

  17. 17

To serve, create a bed of the Parmesan fries on a large platter.

  18. 18

Arrange the sliced steak over the fries.

  19. 19

Pour the warm garlic cream sauce generously over the steak.

  20. 20

Garnish with additional fresh parsley and serve immediately.
