Steak Frites with Parmesan Garlic Cream Sauce

Method

Season the strip steaks generously on all sides with a salt and pepper blend.

Slice the potatoes in half lengthwise.

Use a french fry cutter to cut the potatoes into fries.

Place the cut fries into a large bowl of ice water to soak. This helps remove excess starch.

Place the seasoned steaks directly over hot coals on a grill. Cook for a few minutes per side until a good crust forms.

Flip the steaks and continue grilling until they reach your desired doneness (the video shows a medium-rare finish). Remove from the grill and let them rest.

In a large, deep pan or Dutch oven, heat the bacon grease over a burner until it's hot enough for frying.

Carefully add the soaked and drained fries to the hot grease and fry until golden brown and crispy.

Remove the cooked fries from the grease using a spider strainer and place them in a large metal bowl.

While the fries are still hot, season them with the salt and pepper blend and add the shredded Parmesan cheese. Toss to combine.
